Shawn Peterson, Founder and Executive Director

Shawn is a sixth generation Utah farmer who has been growing food his whole life. Shawn began working on food systems in 2011 when he founded The Green Urban Lunch Box. He is a very creative person who learns by doing. Shawn also has a history of living his dreams. Shawn taught himself how to sail and then sailed from the US to Fiji. He has also embarked on a motorcycle tour from the US to Central America. His latest dream includes educating people about urban agriculture and creating a food system that is more sustainable and healthy.

Katie Nelson, Small Farms Initiative Programs Coordinator

Katie was born and raised in the gentle hills of northeast Nebraska in a small farming community.  Growing up in corn and cattle country, Katie saw and experienced firsthand the lifestyle of the rural Nebraskan farmer.  Later in life she began to try her own hand at gardening, landscaping, and meadow restoration in Colorado, Wyoming, and Utah.  Now, Katie is dedicated to educating the seniors and homeowners she encounters with the GULB’s community FruitShare and Back-Farms programs.  She feels that it is important to build relationships with those she works with, as well as sharing information and the freshly harvested fruits and veggies.

Darin Mann, FruitShare Coordinator

Darin has long had a passion for building community, whether it was founding an organization like U fight PD designed to help people suffering from Parkinson's Disease, or working as an environmental advocate on Capitol Hill for Utah Rivers Council and SLC Air Protectors, Darin has been there to push for a better future.


Now his passion for community and living in a sustainable environment has lead him to work for the Green Urban Lunchbox. He hopes to help build a future where we can sustainably provide food for people through responsible Urban Agriculture and fruit tree gleaning.

Jenae Ridge, Development Director

Growing up in Michigan, Jenae's main idea of farmers were shaped by those angry old men that would chase her and her friends off their fields when she was a kid. After accidently landing an internship at a farmers market in college, she began to become aware of the abundance of food available through her community.


To explore growing food and building community, she sought out internships and gigs across the country. This passion took her from Saint Louis to Hawaii to Utah. While working at the Youth Garden Project in Moab, Jenae's love for gardening really blossomed. She moved to Salt Lake City in 2015 to be one of our first AmeriCorps Vistas. Moving up to become our FruitShare coordinator in 2016 and transitioning into the Executive Director role with EATS Park City in 2017. 

Jenae returns to the Green Urban Lunch Box in 2019 and will continue to grow with our organization.
